Don’t trust their color! Although their skin is attractive, orange and red, apricots are not necessarily ripe. It is better to make sure that their flesh and scent are supple. Be careful, an apricot does not ripen when it is picked!

Ripe apricots spoil quickly. So don’t wait to eat them. No need to put them in the fridge, it doesn’t suit them. In case of heavy harvest, think of compotes and fruit in syrup, but also freezing. Pitches, cut in half, you will store them flat on a plate in your freezer. Once hardened, you could put them in bags. Ideal for sunny winter desserts!
