Kitchen. Melon, zucchini and mint quinoa salad

Ingredients for 4 people:

  • 1 melon of new regions (thick caliber)
  • 500 g of cold cooked quinoa
  • 8 cherry tomatoes
  • 1 zucchini
  • 8 fresh mint leaves


1. Cut the melon in half and remove the seeds with a spoon. Make melon balls with a Parisian spoon. Reserve fresh.

2. Rinse and wipe the cherry tomatoes and remove the stalk. Cut them in half.

3. Wash the zucchini and cut into cubes.

4. Rinse the mint leaves and finely chop them.

5. In a large salad bowl, place the quinoa. Add tomatoes, diced zucchini and melon. Sprinkle with chopped mint. Mix all ingredients.

6. Season the salad with the juice of half a lemon and a drizzle of olive oil. Salt and pepper to taste.

Alternative: add a few face cubes for a creamy note.
